Gingerbread dough fudge bites
I must ask, do you like the plain more clean version, like the first picture, or the more decadent looking white chocolate topped one? I actually think I prefer the more clean looking bites without toppings look slightly better. For once, less is actually more.

Anyhow, this is definitely a recipe I have to and will make multiple times now in December. They’re sweet, nutty, gooey, chewy, filled spices, and not lacking flavour at all. In addition to being decadent tasting, they’re super easy to whip up, and are basically made out of three ingredients: dates, nut butter, and spices.

Let me tell you, one of the best ways to know whether or not a recipe of yours is a success, give a person you love a taste test and see how they react. If they make a sound that sounds something like “MmmMmmmM!” or “YUM!”, and their whole face lights up, then you know the recipe is a winner. That is the reaction I got when my family tried these ginger bread fudge bites.

Gingerbread dough fudge bites

These are chewy, festive ginger bread dough fudge bites that literally melt in your mouth while still being vegan and healthy

Ingredients

Scale

  • 100g / 3,5 oz pitted dates
  • 75g / 2,6 oz nut butter
  • A pinch of salt
  • 3/4 tsp ground cinnamon
  • 3/4 tsp dried ginger
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground cloves

Instructions

  1. In a food processor or powerful blender, process all the ingredients until it forms a clump of smooth “dough”. Divide the dough, and roll into 10 balls. Either serve immediately, or let firm up in the fridge or freezer.

Notes

I totally recommend keeping the bites in the freezer. They firm up, and once you pop them in your mouth, they melt like an absolutely dream.
