Apple Muffins with Streusel Topping & Cardamom

Fluffy and moist apple muffins with buttery crumble and lots of cinnamon and cardamom.

Ingredients

Apple

  • 1 medium apple, sliced
  • 2 tbsp sugar

Crumble

  • 50g butter
  • 25g brown sugar
  • 20g light syrup
  • A hearty pinch of salt
  • 1,5tsp cinnamon
  • 60g rolled oats
  • 30g slivered almonds (or other nuts or more oats)

Muffin

  • 150g butter
  • 180g caster sugar
  • 2 eggs
  • 50g milk
  • 120g plain flour
  • A hearty pinch of salt
  • 1/2 tbsp vanilla sugar
  • 2tsp baking powder
  • 1 tsp ground cardamom and/or cinnamon

Instructions

  1. Preheat the oven to 175C/350F and line a baking tray with muffins liners.
  2. In a bowl, toss the sliced apple with the sugar.
  3. For the crumble, mix together all the ingredients except for oats and slivered almonds. Then mix in the oats and slivered almonds. Set aside.
  4. For the muffins, melt the butter, add the milk, and set aside.
  5. Using an electric mixer or kitchen assistant, whip the eggs with the sugar until white and light.
  6. Sieve the flour, baking powder, vanilla sugar, and salt. Carefully fold the dry into the wet.
  7. Once incorporated, fold in the buttermilk.
  8. Divide the batter between the muffin liners, top with apple slices and crumble. Bake for 16-20 minutes or until a toothpick runs clean. Let cool and enjoy!
